Inspiration for Alan's North Carolina Bar-B-Que

Ever since I was a little boy, I can remember going to my Grandfathers house for a Pig Pikin. My grandfather was a pig farmer, so an abundance of pigs was no problem. Back in those days, they would dig a big hole in the ground, build about a two foot high cinder block wall, and put a grate on it. They would then use a piece of tin that was used for roofing, to make a cover. They would then sit around and cook the pig with charcoal (large gas grills were unheard of back in those days) all night long.

That was over 30 years ago, but as you can see from our pictures, the cooking times (and equipment) have changed, but the quality lives on. We can now bring the whole pig, cooked, to your event for presentation on our professional grill.   Most of our customers have never even seen a whole pig cooked on the grill, and love to take pictures before we chop the meat and prepare our award winning bar-b-que.

Unlike our competitors, we cook with gas so as not to disguise or hide the taste of the meat. All our pigs are USDA approved, and are shipped in from North Carolina. We use our special vinegar based sauce that has been handed down from generation to generation. The sauce is not put on the meat until it has been chopped, allowing you to enjoy the full flavor of the meat. Our sides are made fresh the day of the event, so as to offer the freshest quality to our customers.

In addition to catering private parties, we also serve the public at events around the Tampa Bay area.  Annual events we cater include:

Clearwater Jazz Festival held at Coachman Park
All of the New Port Richey festivals held at Sims Park in New Port Richey
The Pasco County Fair held in Dade City
The Caribbean Carnival held in Vinoy Park
Tampa Bay Blues Festival
The Smooth Jazz Festival held in Coachman Park
Various concerts held at Coachman Park and Vinoy Park

We also catered the VIP tent at last years' RIBFEST held in Vinoy Park as well as catering the VIP tents at the Tampa Bay Blues Fest. We have received an abundance of compliments, and have been asked to cater these events again next year.
